I can just hear the old cartoon advertisement singing, “It’s udderly delicious!” Yes, kids, this is cow udder, cooked, pressed, and served sliced thin with a little mayo and a little Salsa Verde. Consider it your anonymous lunch meat, slightly soft with vague flavor. It’s just another one of those meats that you have to put into context of the poor peasant who had to eat from head to tail, and milk every animal for all its worth.
