This Renaissance delight has modern appeal. The cookie, which dates to 15th century Siena, is believed to have even older Arabic origins. Nevertheless the sweet almond flavor, and moist chewy interior, reminiscent of almond macaroons, appeals to modern taste. Made from ground almonds, aromatic from honey and lemon peel, and leavened through egg whites and baking soda – the cookies are sweet, appealing and gluten free.
