Golossary: Alchermes

Think pink! This sweet liquer soakes and bathes all types of cakes and cookies throughout Tuscany staining them a vibrant fuchsia and transforming otherwise dry sponge cake into something to enjoy. Reportedly created by the friars at the church of Santa Maria Novella in Florence, the alcohol is flavored with herbs and spices including cinnamon, vanilla, rose, jasmine and nutmeg.

You can taste Alchermes in all sorts of Tuscan desserts including often: Pesche Ripiene, Zuppa Inglese, and the most famous dessert from Florence – Zuccotto.
