The evolution of the modern aperitivo. (See Aperitivo.) This is a relatively new introduction to Italian culture especially popular with the younger crowds, but by no means limited to them. Its main attraction is the good value and the vibrant social scene. Bars with fully equipped kitchens provide a buffet of food which can range from bite-sized sandwiches, to pizza, whole grain salads, pasta, crostini, chicken liver pate, salumi, cheese, etc. The food is free with the price of your drink, usually a set price for all drinks. Lesser versions rely almost exclusively on bread, pizza and pasta, ie. cheap carbs; while the food-friendly destinations may have seafood salads, sautéed or braised meat dishes, and sometimes showcase some talented work in the kitchen.
